Winter is such a magnificent time to enjoy the flavors and health benefits of pumpkin. As an excellent source of fiber and Vitamin C not to mention the nostalgic sense of home for the Holidays that it evokes in a great deal of us, it’s no wonder I typically find myself baking up a fresh loaf of pumpkin bread right about now.
Since health and wellness are a huge part of our families lives both as part of the word of wisdom and as the hubs and I are both in the health profession, I am always on the hunt for healthier takes on traditional recipes. This healthier option to pumpkin bread will be a welcome addition at our Christmas table this year.
